Black Bean Salad.
This recipe is perfect for adding new flavours and excitement to your lunchtime - forget typical sandwiches or jacket potatoes and give this recipe a go. It’s quick and easy to make, either the night before, or at lunchtime. This salad is full of veggies, and food that you should be able to find in your cupboard. Experiment with trying different veggies if you prefer, or don’t have all of the ingredients.

INGREDIENTS
120g Cooked Black Beans
1⁄2 an Avocado
1⁄2 a Small Tin Sweetcorn
50g Feta Cheese
50g Olives
1 Pepper
METHOD
Cut the avocado and pepper into slices
2. Drain the sweetcorn and black beans and mix together
3. Add in the pepper and avocado slices
4. Crumble the feta on top, and season as you prefer
