If you have never tried Shakshuka before, you absolutely must! I promise that it will be unlike any breakfast you have ever tried, but in the best possible way. Shakshuka is full of spices and flavour, and will set you up for your day. If you are a vegetarian, you can easily create this recipe minus the chorizo, or add in something different, such as tofu, or extra veggies. I love to make this on a Saturday morning as a treat, and if I make too much, I save it for the next day, or even to treat myself on Monday morning at the office.

RECIPE

Makes: 2 portions

Time to Make: 25 minutes

INGREDIENTS

1 Tin Tomatoes
1 Onion
2 Peppers
1 Packet Spinach
50g Chorizo
4 Eggs
1-2 Slices Sourdough Bread Per Person
30g Feta Cheese to serve
2 tsp Smoked Paprika
1 tsp Chilli Flakes (more or less to taste)

METHOD

  1. Finely chop the onion and chorizo, add to a pan over a medium-low heat and cook until the onion is softening.

  2. Finely slice the peppers and add to the pan so they too start to soften.

  3. Stir through the spices and any salt and pepper to taste.

  4. Add the tinned tomatoes to the pan, bring to the boil and turn down to a simmer.

  5. Crack in the eggs, put a lid on the pan and simmer for 5-10 minutes until the eggs are set to your liking.

  6. Serve straight out of the pan with a sprinkling of feta and sourdough bread to dunk.
